How Hot is Hot?
    Peppers are rated for heat by "Scoville" units. This measurement was invented by Dr. Wilbur
    Scoville in 1912 when he measured the number of drops of sugar water to one drop of capsaicin  to
    result in no longer feeling the burn on the tongue.  The hotter the chile pepper, the more sugar
    water it takes to dilute it.  Below is a scale rating some of the different peppers and their respective
    scoville units. Keep in mind that the growing conditions, soil and weather can affect the Scoville
    ratings of peppers as listed.
